Ingredients:
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 eggs, beaten
2 cups Italian-seasoned breadcrumbs
1 cup vegetable oil
2 cups marinara sauce
1 cup shredded mozzarella cheese
Salt and pepper, to taste
Instructions:
Preheat the oven to 375 degrees F.
Season the chicken breasts with salt and pepper.
Place the flour in a shallow dish. In a second shallow dish, beat the eggs. In a third shallow dish, place the breadcrumbs.
Dip each chicken breast in the flour, shaking off any excess. Then dip in the beaten eggs, and finally coat in the breadcrumbs.
Heat the oil in a large skillet over medium-high heat. Add the chicken and cook for 2-3 minutes per side, or until golden brown and cooked through.
Place the chicken in a baking dish and top each breast with marinara sauce and mozzarella cheese.
Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
Beef Stroganoff:
This classic Russian dish is made by sautéing sliced beef in butter, then adding onions, mushrooms, and a sour cream sauce. It is often served over egg noodles.
Ingredients:
1 lb beef sirloin, sliced into thin strips
2 tbsp butter
1 onion, diced
8 oz mushrooms, sliced
2 cloves garlic, minced
2 cups beef broth
1 cup sour cream
Salt and pepper, to taste
Instructions:
In a large skillet, melt the butter over medium-high heat.
Add the beef and cook for 3-4 minutes, or until browned.
Add the onions, mushrooms, and garlic and cook for an additional 2-3 minutes, or until the vegetables are softened.
Stir in the beef broth and bring to a simmer.
Reduce the heat to low and stir in the sour cream. Cook for 1-2 minutes, or until the sauce is heated through.
Season with salt and pepper to taste.
Serve over cooked egg noodles.
