Ingredients
  

  • 1/4  cup  very finely minced onion
  • small clove garlic, finely chopped
  • teaspoon  ground coriander
  • teaspoon  sweet paprika
  • 1/2  teaspoon  ground mustard seed
  • 1/4  teaspoon  dried marjoram
  • 1/4  teaspoon  ground mace
  • 1/4  cup  milk
  • 1  large egg white
  • 1 1/2  teaspoons  sugar
  • 1  teaspoon  salt, or to taste
  • teaspoon  freshly ground white pepper
  • pound lean pork, cubed
  • 3/4  pound lean beef, cubed
  • 1/4  pound pork fat, cubed

For the Casing:

  • feet sheep casings (or small hog casings), about 1 1/2 inches in diameter
  • tablespoon  white vinegar

Instructions
 

  • Boiling: Fill a large pot with water and bring it to a boil. Carefully add the hot dogs to the pot and let them cook for about 5-7 minutes, or until they are heated through.
  • Grilling: Preheat your grill to medium-high heat. Carefully place the hot dogs on the grill and cook them for about 3-5 minutes per side, or until they are heated through and have a nice char on the outside.
  • Pan-frying: Heat a small amount of oil in a pan over medium heat. Carefully add the hot dogs to the pan and cook them for about 3-5 minutes per side, or until they are heated through and have a nice crust on the outside.
  • Microwaving: Place the hot dogs on a microwave-safe plate and cover them with a damp paper towel. Cook them on high for about 1-2 minutes, or until they are heated through.
  • To serve, place the cooked hot dogs in buns and top them with your desired condiments such as ketchup, mustard, mayonnaise, cheese, onion, pickles, sauerkraut and chili.
